Yamanaka Sushi's hometown of Fukuoka is surrounded by several seas. The Genkai Sea is a treasure trove of fish species and the Ariake Sea has a unique ecosystem. At Yamanaka, you'll find raw-mackerel and kelp-cured nigiri — sushi that is unlike anything you've had in Tokyo or Osaka. Chef Yamanaka Takuo has been perfecting his skills for 68 years: he dazzled passengers when he was chef on the luxury "Seven Stars in Kyushu" tourist train. Many travelers visit Fukuoka just to try his sushi. Besides its main storefront, Yamanaka has branches at Hakata Station and elsewhere around town. We recommend ordering the omakase meal, or chef's choice, to experience artisanal sushi in the flavors of Fukuoka's seasons.
