The Kimuraya bakery first opened in 1869. In 1874 it invented the anpan, a sweet bun made of sake yeast (rice and koji yeast) and filled with bean paste. The next year, it created the Sakura Anpan — the sweet bean bun topped with a salted cherry-blossom petal — to present to the Emperor Meiji. It has been famous ever since. The flagship store in Ginza serves freshly baked anpan to this day.
