Kakigoori, or shaved ice topped with syrup, has been a beloved dessert in Japan for over 1,000 years. Kakigoori shops have sprung up across the country, each with its distinct shaving techniques and flavors. Oishii Kōri-ya, in Fukuoka, prides itself on bringing out the "deliciousness of the ice itself."
There are three requirements for delicious ice: hardness, slow melting, and transparency. Kakigoori specialty shop Oishii Kōri-ya is operated by Kyushu-Seihyou Co., Ltd., which slow freezes its ice for over 48 hours while removing impurities. It also has a unique method of shaving the ice, creating a texture that melts softly the moment it enters your mouth. This ice has been a local favorite in Fukuoka Prefecture for over 80 years.
Scoop up a spoonful of pure white ice. Savor its taste and texture. Next, take a spoonful with the syrup. The most popular menu item is Premium Amaou, made of Fukuoka-grown Amaou strawberries, which are simmered for a long time to create an exquisite sauce of just the right consistency. The sauce is poured over the ice, along with a condensed-milk sauce, also made in-house, together bringing out the richness of strawberries and milk.
